Mise en place: get out all ingredients & equipment for cooking. Wash, chop, and measure all ingredients.
Heat large stock pot over medium-high heat. Once hot, drizzle 1T oil on bottom of pot. Add ground turkey (or beef), breaking it up as it cooks. Once cooked through and no longer pink add in diced onion and garlic. Stir. Cook until onion is soft about 3 minutes.
Add kidney beans, canned tomatoes, green chiles, spices, bay leaf, salt, pepper, and broth. Stir to combine. Bring to a boil, then reduce the heat and simmer for 30-45 minutes.
